Try this YUMMY & HEALTHY Cauliflower Soup!
A potent source of fiber and B vitamins. Simple to put together and you’ll never know it’s dairy free, too! Serves 4
Ingredients:
2 Tbsp extra virgin olive oil (reserve ¼ tsp for serving)
½ medium onion, diced
2 cloves garlic, sliced
4 cups water
1 medium cauliflower, cut into chunks
¼ cup raw cashews
2 Tbsp sesame seeds or 1 Tbsp tahini
¼ avocado
Salt and pepper to taste
1 Tbsp chopped fresh parsley
Preparation:
1. Heat the oil in a soup pot over medium heat. Add the onion and garlic and sauté for 5 minutes until translucent.
2. Add 4 cups water, cauliflower, cashews and sesame seeds or tahini. Bring to a boil.
3. Reduce heat to low, and simmer for 10 to 15 minutes, or until cauliflower is tender.
4. Let cool for 5 minutes.
5. Transfer to a blender and blend with the avocado until smooth. (Or use a hand-held immersion blender to puree directly in the pot.)
6. Season with salt and pepper. Drizzle with the ¼ tsp olive oil and chopped parsley.
